The Natural Sciences Education & Outreach Center collaborates with CSU faculty, National Parks and citizen science programs to translate their current scientific research into unique STEM experiences for students in the form of Educational Kits that can be checked out. Each kit contains just about all of the materials needed (minus common things like water and paper towels) to explore some really interesting scientific research topics.The kits are available for teachers and informal educators in Colorado to check out for a duration of a week by submitting either a local pickup form or a delivery form available at the linked website. This kit is provided free for educational use. This Kit is available in Spanish.

Students conduct an experiment to determine whether or not the sense of smell is important to being able to recognize foods by taste. They do this by attempting to identify several different foods that have similar textures. For some of the attempts, students hold their noses and close their eyes, while for others they only close their eyes. After they have conducted the experiment, they create bar graphs showing the number of correct and incorrect identifications for the two different experimental conditions tested.

In the capstone, Unit 3, students are provided a real-world example of local community action to address the challenge of "healthy food access." The 2015 Leon County (Florida) Sustainable Communities Summit highlights the results of communities working together to promote environmental and food justice. By the end of Unit 3, instructors can deliver a call to action to empower students to be participatory citizens in their communities. The summative assessment will evaluate the students' ability to synthesize the module learning objectives and demonstrate the use of science practices.

Our Paleolithic ancestors regularly engaged in physical activity to survive. A refreshing intervention in dance studies, this book brings together elements of historiography, cultural memory, folklore, and dance across comparatively narrow but markedly heterogeneous localities. Rooted in investigations of often newly discovered primary sources, the essays afford many opportunities to compare sociocultural and political reactions to the arrival and practice of popular rotating couple dances, such as the Waltz and the Polka. Leading contributors provide a transnational and affective lens onto strikingly diverse topics, ranging from the evolution of romantic couple dances in Croatia, and Strauss’s visits to Hamburg and Altona in the 1830s, to dance as a tool of cultural preservation and expression in twentieth-century Finland.

The main content covered in this unit includes the Structure and Function of the biological molecules, the energy flow and the nutrients, Nutritional Facts Labels, and the My Plate concept. Proteins, nucleic acids, polysaccharides in carbohydrates are considered macromolecules, and the lipid molecules are considered as biomolecules. For clarity purposes, proteins, nucleic acids, carbohydrates, and fats will be referred to as “biological molecules” throughout the unit. The history of studying these biological molecules dates back to the early 19th century. British physician-chemist, William Prout (1785-1850) was the first to classify “foodstuffs or ingredients of life into saccharinous (carbohydrates), oleaginous (fats), and albuminous (proteins)” and urged that “a satisfactory diet should include carbohydrates, fats, protein, and water”3. Carl Schmidt coined the term “carbohydrates” in 1844.
