The goal of the Designing for All: A Toolkit for Maximum Digital impact is to provide resources for instructors at Vancouver Island University to create digitally accessible courses for their students. It focuses on the suite of tools supported by the Centre for Innovation and Excellence in Learning (CIEL). A giant thank you to BCcampus and their Accessibility Toolkit - 2nd Edition. Food Safety, Sanitation, and Personal Hygiene is one of a series of Culinary Arts open textbooks developed to support the training of students and apprentices in British Columbia’s foodservice and hospitality industry. Although created with the Professional Cook, Baker and Meatcutter programs in mind, these have been designed as a modular series, and therefore can be used to support a wide variety of programs that offer training in foodservice skills.

Food Studies aims to help readers understand and address numerous issues within food, food culture, and food systems. These subjects transcend disciplinary boundaries and call attention to how matter, meaning, and movement produce complex and dynamic food-human realities. Chapters range from sovereignty to breastfeeding, financialization to food porn, pollination to fair trade. Embedded throughout, art, poetry, illustration, and audiovisual works offer moments to reflect on and synthesize the text-based entries. Through reading, classroom discussion, and engaging with the extensive pedagogical tools, learners and teachers alike may acquire a new sense of things foodish—along with a new sense of their own place and role within food systems themselves.

Our goal in writing this text was to provide a comprehensive overview of the diverse and broad field of forensic psychology, including applications in both the criminal and civil legal systems, with a focus on the Canadian experience. The core topics include forensic assessment in the criminal and civil domains, treat- ment, children and juveniles in the legal system, eyewitness testimony, police and police investigations, jury decision making, and correctional psychology.

The emphasis in this course is about establishing the kinds of habits and techniques that you can build upon if you choose to pursue visual media production further than the extent to which this course is designed.

From the Ground Up is a collection of undergraduate writings on the interplay between health, the environment and community. The chapters range from engaging pieces on life during the Covid Lockdowns of 2020 to the environmental artist and food justice activist Ron Finley who is merging community, art and food security in South Central, Los Angeles. This work also includes an exceptional analysis of the haunting legacy of contaminated waterways in Brazil. The methods of analysis found within the collection include PhotoVoice and visual analysis—methods which have long been utilized within sociology, history, cultural studies, anthropology and community-based participatory research to achieve theories of resilience (via an analysis of community voices and community art forms) that literally emerge from the ground up.

This text provides readers with a comprehensive study of the theory and analysis of tonal Western art music. Author Andre Mount begins by building a strong foundation in the understanding of rhythm, meter, and pitch as well as the notational conventions associated with each. From there, he guides the reader through an exploration of polyphony—the simultaneous sounding of multiple independent melodies—and an increasingly rich array of different sonorites that grow out of this practice. The book culminates with a discussion of musical form, engaging with artistic works in their entirety by considering the interaction of harmonic and thematic elements, but also such other musical dimensions as rhythm, meter, texture, and expression.
